niallharbison

Ingredients
  • Couple of large potatoes
  • 1 Bag of basil
  • 1 Chorizo
  • Some Mature fancy cheese
  • 1 avocado
  • 1 packet of Rocket
  • 1 Red Onion

We’ve seen spuds served the same way for decades right? Roasted, boiled, chips, baked etc? Same old fucking shit every time. Well I happen to think that they are one of the most versatile ingredients going and with cash tight at the moment for most people in Ireland as they wait through the longest fucking month of the year to get paid I wanted to come up with something cheap and tasty as fuck. Introducing one of the tastiest baked spuds recipes you’ll ever try. Go on give it a lash!

Instructions

Step 1

The ingredients are cheap. Cheese it up to you, get something you like. A mature cheddar works great

Step 2

First step is super simple. Fuck the potatoes onto a tray and lash a little oil onto them and cook in the oven for 45 minutes on 180C. While the cook go do the washing or something

Step 3

Grab the Chorizo out. I like a spicy one to liven things up but up to you what you get

Step 4

Chop the bastard up into small pieces

Step 5

Peel the red onion. Not going to tell you how to do that. Pretty fucking simple in fairness

Step 6

Slice the bastard into even sized pieces

Screen-Shot-2014-01-11-at-12.08.35

Step 7

Lash on a frying pan to a medium heat and fuck in some oil

Screen-Shot-2014-01-11-at-12.08.43

Step 8

Lash in the onions and chorizo

Screen-Shot-2014-01-11-at-12.08.55

Step 9

The potatoes will take roughly 45 minutes but be sure they are soft in the middle by poking a knife in

Screen-Shot-2014-01-11-at-12.09.04

Step 10

Cut them in half and let the fuckers cool down

Screen-Shot-2014-01-11-at-12.09.16

Step 11

When they are cool enough to touch and not burn your little fingers scoop them out using a spoon.

Step 12

The chorizo and onions should be exuding (what a douchebag word that is!!) flavour at this stage. Fuck in the spuds that you have scooped out

Screen-Shot-2014-01-11-at-12.09.38

Step 13

You’ll be left with some of the potato skins looking like this.

Screen-Shot-2014-01-11-at-12.09.50

Step 14

Mix the spuds, chorizo and onions together gently

Screen-Shot-2014-01-11-at-12.10.03

Step 15

Lash in the entire bag of green stuff. This is to be moderately healthy and make it look all pretty and green and stuff

Screen-Shot-2014-01-11-at-12.10.22

Step 16

Take your mixture off the heat. All you want to do is wilt the greens down

Screen-Shot-2014-01-11-at-12.10.31

Step 17

Grate in a good handful of cheese.

Screen-Shot-2014-01-11-at-12.10.49

Step 18

Pick the basil leaves away from the stalks

Screen-Shot-2014-01-11-at-12.10.57

Step 19

Roll the leaves up like a cigar and chop the bastards nice and fine

Screen-Shot-2014-01-11-at-12.11.04

Step 20

mix the whole thing together. Fuck in a bit of salt and pepper too

Screen-Shot-2014-01-11-at-12.11.12

Step 21

You have the mix and the shells now. Don’t need to be a genius to see what is coming next…

Screen-Shot-2014-01-11-at-12.11.23

Step 22

Split the mix between the skins

Screen-Shot-2014-01-11-at-12.11.30

Step 23

Grate a bit of cheese onto each one and pop them back into the oven for five minutes to heat them and melt the cheese.

Screen-Shot-2014-01-11-at-12.11.40

Step 24

While they are in the oven grab the avocado. Make sure the bastarding supermarkets haven’t sold you a dud and that it is nice and soft + ripe.

Screen-Shot-2014-01-11-at-12.11.48

Step 25

Cut the bastard in half and whip out the stone

Screen-Shot-2014-01-11-at-12.11.56

Step 26

It should be soft and mushy. If it isn’t forget it not worth thinking about. Most supermarkets sell more expensive ones that are ripe. Splash out on one of these

Screen-Shot-2014-01-11-at-12.12.03

Step 27

Chop it up roughly. Season up with salt and pepper and a little drizzle of good oil or even lemon if you have one handy.

Screen-Shot-2014-01-11-at-12.12.10

Step 28

Grab the spuds out of the oven

Screen-Shot-2014-01-11-at-12.12.18

Step 29

Place them on the plate.

Screen-Shot-2014-01-11-at-12.12.26

Step 30

Big generous amount of avocado in the middle and you are fucking laughing. Serve immediately

Screen-Shot-2014-01-11-at-12.12.361

There you go. Couldn’t really be much easier than that. Spend about a tenner and double up all the ingredients and you’ll have enough to feed a good five or six of you. This is the perfect sort of food to prepare for watching a big sports event or a movie on the telly. Comfort food that is as tasty as fuck. Go on grab some spuds and get cooking.
