Super Simple Chicken And Sweet Red Pepper Pasta Bake

Ingredients
  • 3 Red Peppers
  • 4 Cloves Garlic
  • 1 Packet of pasta
  • 2 Chicken breasts
  • White Cheddar
  • Parmesan
  • Chicken Stock
  • Cream

Who doesn’t love a really good pasta bake? All those lovely little chewy bits on top mixed with all the nice cheese. Absolutely fucking gorgeous if you ask me. It was tricky to come up with a recipe that has just seven ingredients but this is it and the best thing is that it doesn’t even take 20 minutes from start to finish. You can lash this in the oven, go and stick your washing on, have a shower and come back and have it piping hot coming out of the oven. What I love most about it is that it tastes just as good if not better the next day!

Instructions

Step 1

The ingredients are super simple and you’ll find them all in a local small supermarket.

Start by chopping all the pepper flesh away from the stems and then cutting them in to medium sized pieces

Step 3

Peel the four cloves of garlic.

Chop the garlic up as small as you possibly can.

Step 5

Lash on a big pan that you can cook the entire mix in. Fuck in some oil and have it on a medium to high heat.

Step 6

Cook the garlic and the peppers over a medium heat for a good 8-10 minutes.

Step 7

Grab your chicken out of the packet and place them on a nice clean chopping board.

Chop the chicken up in to nice even sized pieces

Crumble the chicken stock up in a bowl

Place in some warm water and whisk the shit out of it using a whisk or a fork.

Cook the peppers down until they are nice and soft.

Lash the pasta in to some boiling water. Follow the instructions on the packet

When the peppers are nice and soft lash in the chicken, some salt and some pepper

Stir that around and make sure the chicken is getting some nice colour.

When it has colour add in the chicken stock and turn the heat right up.

When the chicken stock comes to the boil fuck in the cream.

Strain the pasta off and place it in to some sort of deep oven tray

When the sauce comes to the boil grate in a fuck load of parmesan cheese.

When the sauce is starting to get a little thick pull it off the heat and lash it on to the pasta

Mix the whole thing up so as all the pasta is covered in sauce.

Grate another load of parmesan cheese over the pasta

Grate cheddar cheese on top of that to completely cover the pasta. It doesn’t have to be an exact science but if you like it nice and cheesy go really heavy on the cheese. Once you’ve done that fuck it in to the oven at 180C for about 10-15 minutes

Take it out of the oven when it is nice and golden brown. Take it out of the oven and serve it up immediately.

So there you go a simple pasta bake that couldn’t be easier to make. I’ve kept it this simple on purpose so as you can add in as many ingredients as you want yourself. I’d suggest that herbs, additional veggies or even different cheeses would be a great way to add your unique stamp on this. make a batch of this on a Sunday night and you are fucking laughing for lunch or dinners for the rest of the week.
