We love a good pop-up as much as the next fella.
The excitement, the passion for food, the limited edition-ness and mystique of it all – they really are one of our favourite foodie concepts and we welcome each new one in Dublin with open arms.
The latest one launches next week in Dublin and we are so excited.
Say hello to Jackrabbit.
These guys will be taking up residency every Thursday, Friday and Saturday nights in CoCu on Chatham Street just off Grafton – here’s all you need to know:
- Launches next Thursday, February 23 – until further notice
- Thursdays, Fridays and Saturdays from 6pm until 10pm
- BYOB
Think laid back, street food vibes meets big flavours, tasty food and a buzzin’ atmosphere.
Jackrabbit’s aim is to serve fast food that’s a long time in the making. All ingredients used are of the highest quality, meticulously chosen and prepared.
The menu:
Grub on offer includes braised BBQ brisket, free-range fried chicken and pan fried chilli prawns – all in bunsssss hun.
Sides include house spiced fries, cheddar fries, slaw and green chilli butter and coriander grilled corn.
Literally drooling at the thought.
But that’s not all… they’ll also be serving desert.
How does peanut butter and jelly malt chocolate tart sound? Yeah. Speechless.

You may recognise Jackrabbit chef Ian Marconi from the tasty Paella Guys stall from Dublin’s food market scene. And if that food is anything to go by, this pop-up is going to be amazingggggggg.
A welcome addition to Dublin.
To keep up to date on the pop-up keep an eye on CoCu‘s social media.
