The soon to be very trendy Liberties area in Dublin is getting a brand new boutique whiskey distillery in the former St James’s Church on James’s Street.
The Journal reports that the distillery has been granted permission for a full drinks license (hurrah!), and will be open to the public at the end of the summer.
The Pearse Lyons Distillery has had a €10million refurbishment and the owners behind the newest distillery in Dublin, entrepreneur Pearse Lyons and his wife, Deirdre, also own a brewery and distillery in Kentucky, USA.
Specially made stained glass windows been placed in the church which portray all the steps of distilling.
There will be a walkway through the graveyard into the distillery and there will also be a visitors centre on one side of the church.
The boutique will produce 1,000 litres of whiskey a week once it’s up and running and is expected to attract up to 75,000 visitors a year.
Nice one.
