Ever think that you’d kill it on Come Dine With Me at every part except for the dessert bit? Us too. Desserts are hard.
BUT, they don’t have to be. Here are 9 easy peasy desserts that have minimal ingredients and take less than fifteen minutes to whip up.
1. Raspberry Eton Mess
A tangier twist on the strawberry classic.
All you need is to lightly fold 2 cups of whipped heavy cream, 1 packet of crumbled meringues, 2 tablespoons berry purée into a large, chilled bowl. Generously sprinkle chopped raspberries and remaining purée on top and you’re away.
2. Bananas Foster
You need: 1 pint of vanilla ice cream, 2 tablespoons of butter, 1/2 cup of brown sugar, 1/4 cup of rum and 3 bananas. You’re basically getting your five-a-day right here.
Heat butter, sugar and rum over medium heat (if rum ignites, relax and just wait for flame to subside and then continue) for 4-6 minutes. Add bananas until warm. Then serve with ice-cream. Simples.
3. Cherry Crisp
You need: 1/2 cup sugar,1 tablespoon cornflour, 4 cups red cherries, 1 cup crumbled shortbread biscuits, 2 tablespoons of melted butter/margarine and1/4 cup chopped nuts.
Combine sugar and cornflour. Sprinkle this mixture over cherries and stir to combine. Put over medium heat until thickened and bubbly (10mins). Combine crumbled shortbread, butter, and nuts. Divide cherry mixture among four dessert dishes. Sprinkle shortbread mixture over cherry mixture.
Serve with ice cream.
4. Quick Strawberry Cheesecake
You need: 2 ounces of softened Brie, 3 ounces of softened cream cheese, 2-3 tablespoons sugar, 1 teaspoon lemon juice, 2 cups sliced fresh strawberries and 1/2 cup of sliced almonds.
In a medium bowl, beat Brie, cream cheese, sugar, and lemon juice with an electric mixer on medium speed until almost smooth. Divide half of the strawberries among four dessert glasses/bowls. Top with half of the cheese mixture and half of the almonds. Repeat layers once more. If desired, drizzle with honey.
5. Boozy Chocolate Fondue
You need: 2 1/2 cups whipping cream, 12 ounces chopped chocolate and 1/4 cup orange liqueur, amaretto, hazelnut liqueur or brandy. And assorted dippers (marshmallows, fruits etc)
Combine the whipping cream, chocolate and orange liqueur on a low heat for 2 1/2 – 3 hours, whisking once halfway through cooking until mixture is smooth and chocolate is melted. Serve immediately. Serve fondue with desired dippers. (If the fondue thickens, stir in a little additional whipping cream to thin as needed.)
6. Quick Apple Crumble
You need: A can of sliced apples, 1/4 cup mixed dried fruit bits, 1 teaspoon vanilla, 2-3 tablespoons sugar, 1 teaspoon cinnamon, 3 tablespoons butter (grated), 1+1/2 cups low-fat granola.
Place undrained apples and raisins into a square baking dish. Stir in vanilla. Sprinkle sugar and cinnamon over apples. Top with grated butter. Sprinkle granola evenly over apple mixture. Bake in a 375 degree Fahrenheit oven until apples are heated through and topping is golden. Serve with ice cream.
7. Strawberry And Rhubarb Sundaes
You need: A pound of strawberries (quartered), 2 rhubarb stalks (cut into 1/2-inch pieces), 1/2 cup sugar and 2 pints of vanilla ice cream.
Place strawberries, rhubarb, sugar, and 1/4 cup water into a pan and bring to a simmer over high heat. Cook, stirring occasionally, until rhubarb begins to break down (6-8 mins). Spoon strawberry-rhubarb sauce over scoops of ice cream.
8. Strawberries With Yoghurt And Pistachios
You need: The three items in the title and honey.
Place in a bowl and serve, it’s that simple.
9. Pineapple With Ginger Yoghurt
You need: 1 tablespoon finely grated fresh ginger,1 cup plain yogurt, 3 tablespoons honey, 1 pineapple, pared, cored, and cut into wedges and 1/4 cup sliced toasted almonds (optional).
Juice your ginger (you should have 1 to 2 teaspoons) and discard the pulp. Add yogurt and honey to juice; mix to combine. To serve, divide pineapple among four serving plates, top with sauce and, if desired, almonds.
