Chicken Breast Stuffed With Green Olives and Goat’s Cheese

This is a great meal for when you come in from work absolutely ravenous and needing something hearty. This chicken breast is stuffed with creamy goats cheese which makes it slightly decadent, while the olives give it a nice kick. It's equally delicious served with salad, brown rice or baked potatoes.

Instructions

Step 1

Preheat the oven to Gas Mark 6/ 200C/ fan oven 180C. Toss the onion, tomatoes and most of the thyme together on a non stick baking tray and spray lightly with the cooking spray. Spread out into an even layer, making space in the centre of the tray. Mix the goat’s cheese and olives together with the rest of the thyme. Use a sharp knife to cut a horizontal pocket into each chicken breast. Try to keep the opening quite narrow, but use the tip of the knife to open up a deeper pocket within the chicken breast. Be careful not to cut all the way through to the other side.

Step 2

Use a teaspoon to stuff the goat’s cheese mixture into each chicken breast.

Step 3

Nestle the chicken amongst the vegetables on the baking tray and spray lightly with the cooking spray. Roast in the oven for 20 minutes, or until the chicken is cooked through, stirring the vegetables around half way through.
