Mega Christmas Stuffing Recipe

Ingredients
  • 1 Packet Of Breadcrumbs
  • 1 Packet Of Sage
  • 2 White Onions
  • Loads Of Butter
  • 1 Packet Of Hazel Nuts
  • 1 Packet Of Brazil Nuts
  • 1 Packet Of Sausage Meat

There are many individual parts that make up an epic Christmas dinner but for me the one that brings them altogether is the stuffing. Balls that up and the whole dinner is ruined. Not just the day itself but the stuffing in the sandwiches the following day is just as important. This is a simple little recipe that is bursting with flavour and which even the once a year chef could get their heads around. The ingredients are simple, it takes about 10 minutes to lash together and it tastes absolutely fucking delicious

Instructions

Step 1

Your fridge will be wedged full of all sorts of shit and the chances are you'll have a good few of these ingredients already. Free up some space by making this in advance

Peel a couple of onions. Nothing complicated here

Chop the bastards up into as small even pieces as you possibly can

Grab the sage and pick all the leaves away from the stalks

Chop up a good large knob of butter

Lash it into a pan on a medium heat

This is the only slightly tricky part. You want to foam the butter up until it is slightly brown but not burnt. This will give it a nice warm nutty flavour

This is where all the flavour is going to come from and you'll be blown away by the smells wafting around the house. This is Christmas baby!

Keep it stirred at all times. You don't want the onions or sage to take on any colour at all

Fuck in the sausage meat. You could use actual sausages as well at this stage if you pushed the meat out of their plastic casing.

Use your wooden spoon to break it all up.

Keep it moving at all times over a nice low to medium heat.

While the sausage meat is cooking chop the shit out of the nuts.

Make sure they are all evenly chopped. Not too bit so as they stand out but not too small either.

Fuck the nuts into the mix and stir them around. They don't need to be cooked for more than a minute. More of a mixing job.

Lash in the breadcrumbs. Just keep adding them until it gets to a nice consistency that you are happy with. Pull it off the heat and you are ready to go.

Boom that is it. Serve it up immediately at the table or pop it into the fridge for later. Absolutely fucking gorgeous.

Given that there are so many elements to bring together on the day itself I love to make this in advance. Make a huge big fuck off pot full of it and you can keep it in the fridge and warm it up as needed. Lets face it you can never have enough stuffing and being able to just whip it out and warm it up on the spot is the ideal solution. Grab the simple ingredients and give this a lash. You won’t regret it.
