Ingredients

1 pinch black pepper
50g melted butter
1 tbsp chopped capers
1 pack filo pastry
150g grated halloumi cheese
1 tbsp olive oil (plus extra for greasing)
1 finely chopped onion
1 pinch salt
1 tsp finely chopped fresh coriander
2 tbsp finely chopped fresh parsley
500g quality Irish lamb mince
1 diced tomato
1 tsp ground turmeric

Instructions

Step 1

Preheat the oven to 200oC. Grease a baking tray with a little olive oil.

Step 2

Heat the oil up in a medium-sized pan set over a high heat. Add the chopped onion and cook for 2-3 minutes. On top of this, add the minced lamb and season with salt and pepper (but don't be too generous with the salt, as halloumi cheese is quite salty). Once the lamb is fully browned, transfer to a bowl with a slotted spoon and allow to cool.

Step 3

Add cheese, tomato, parsley, capers, coriander and turmeric into the bowl, and mix until well combined.

Step 4

Trim the filo sheets into 10cm x 30cm rectangles. Note: When working with filo pastry, you must keep it covered with cling film or a cold, damp kitchen towel to prevent it from drying out.

Step 5

Brush the edges of one sheet with a baking brush and a little melted butter. Spoon a tablespoon of lamb filling onto the bottom right corner of the sheet. Fold the right corner diagonally up to the left to make a triangle. Fold up along the top edge to create another triangle, then fold to the right. Keep folding triangles like so all the way up to the top of the pastry. Place your samosas on the pre-oiled baking tray, and brush the top with a little more melted butter. Repeat with the remaining filo pastry and fillings.

Step 6

Bake in the oven for approximately 15 minutes, until golden. Serve immediately. This recipe goes perfectly with a yogurt and cucumber dip served on the side.
