This 10-Minute Pasta With Kale, Bacon & Mushrooms Is The Perfect Monday Night Meal

Ingredients
  • Kale
  • Pasta
  • Bacon
  • Parmesan
  • Parsley
  • Courgette
  • Garlic
  • Red onion

This is one of the tastiest pastas you’ll ever eat and it’ll only take you about 10 minutes to cook.

The key is to buy really good quality bacon, so it doesn’t leak out water and doesn’t dilute the smoky flavour.

The salty taste from the bacon and the parmesan will mix beautifully with the kale and courgettes.

Once you learn this recipe there will be no looking back. An absolute cracker…

Instructions

Step 1

Invest in good bacon and if you’re not a fan of mushrooms you could always add veg like asparagus or green beans.

Step 2

Start by gently frying the garlic for a couple of minutes.

Step 3

Slice up the mushrooms, onions and dice the courgette.

Add the slice bacon to the garlic.

Step 5

After about two minutes add the mushrooms and cook for a couple more minutes. Then add the courgette.

Pop the pasta in to cook. I used really thin spaghetti as it works with the simplicity of this dish and cooks in no time.

Step 7

You want some nice colour on the bacon and mushrooms without anything burning.

Step 8

About a minute before the pasta is cooked lash in the kale.

Step 9

Strain the kale and pasta and add it into the veg, along with grated parmesan and the chopped parsley.

Step 10

Stir it all up so as everything is coated evenly and season with salt and pepper.

Serve up immediately.

I often make two portions at once when cooking this dish, as it keeps well and is perfect to heat up for lunch or dinner the next day.
