This gorgeous pizza is easy for kids, tasty for adults and is super simple to make at home.
So stick on some Pavarotti, prepare the gelato and practise your best Italian accent - because tonight is pizza night.

Heat up the oven to 220oC/gas mark 7, and lightly dust a work surface with spelt flour.
Mix flour, baking powder and sea salt together in a large mixing bowl until combined. Make a well in the middle and start to trickle the olive oil in. Start to mix and add in the water bit by bit until it forms a messy dough. If the dough is getting too wet and sticky, stop adding water. Add more flour if necessary.
Roll mixture into a ball, then knead for a few minutes on the floured work surface. Divide the ball into two. Use a rolling pin to stretch the base out until it's about 26cm in diameter. Oil your pizza tray or place on a non-greased pizza stone. If you don't have either, use tin foil. Bake in the oven for about 8 minutes on each side, until it just starts to brown.
Note: You don't want to fully cook the base at this time, otherwise it will burn when you cook it with the toppings.
To make the sauce, heat the passata in a saucepan set over a medium heat. Add garlic, basil, tomato purée and oregano and mix well. Bring to the boil, then reduce the heat and allow to simmer and thicken for 5 minutes. Once thickened, set aside and allow to cool.
Once the pizza has become lightly brown and crispy, take it out of the oven. Spread a thin layer of sauce over it and add your toppings. Put it back in the oven until it's cooked to your preference.
The best thing about homemade pizzas, is that you can chop and change your toppings and preferences as you see fit.
