Emma’s Cheap, Quick and Easy Almond Milk

Ingredients
  • 200g Blanched Almonds
  • 750ml Water

Almond milk has really risen in popularity for all it’s health benefits and people seem to be drinking it more and more. While the cartoned stuff can sometimes be sweetened, or if not taste a bit bland, the freshly made stuff at our local juice bars can be a bit expensive to be drinking regularly. Making your own is really quick and easy and you get much more bang for your buck. Make it this weekend and enjoy it with your granolas, cereals or porridge. It’s also great in smoothies. This is a fuss free way to make it without the usual cheesecloths etc.

Instructions

Step 1

Soak the almonds overnight in the water, this is essential. No big deal really- just throw them in a bowl and go to bed.

The next day after the almonds have soaked overnight, throw them into a blender.

Add in your water and blender on the highest speed for about a minute or two until totally blitzed up.

This is the part that’s important if you want to do it the cheat’s way (without the cheesecloth and squeezing etc). You have to use a really fine strainer, the usual ones will be too big and you will be left with grainy, gritty milk. So use one like the one on the left in the picture rather than the one on the right.

Strain all the milk through your fine strainer.

With a spatula squeeze out all the milk through the wet almond mix in the sieve to get every last drop out. You ca bake the left over almond meal in the oven until dry and use it in cakes and muffins… Waste not want not.

Make sure to store your almond milk in an air tight container (jars will do) in the fridge for about a week. You might need to give it a little shake before serving as it can separate but that’s totally normal.
