- 60g chia seeds
- 50ml almond milk
- 1 can coconut milk
- 2 tbsp maple sirup.
Sometimes you want to have a healthy and light start to the day and chia seed pudding has quickly become our go-to dish.
Chia seeds are one of those health foods that you are probably aware of at this point, but have you really worked out the best way to get this magical little seeds into your body?
On a recent trip to NYC, I discovered how I could actually use chia seeds. Here is the best idea we’ve come across so far. It takes a few minutes to throw together but requires a little forward planning as the seeds need time to soak up all the liquid.
You may have noticed this popping up in Dublin cafés like Sprout & Co but now you can make your own!
Instructions
Step 1
Get together all your chia pudding ingredients.
Step 2
Pour the chia seeds into a container. If you’re planning on having guests over for breakfast then consider making individual mini pots.
Step 3
Cover them with almond milk and mix.
Step 4
Add in the coconut milk can. If the coconut milk has separated in the can add in the coconut cream first and mix. Then pour in the water until the container is almost full.
Step 5
Add a touch of maple syrup for sweetness.
Step 6
Mix it all together throughly. Place in fridge for a few hours, ideally overnight.
Step 7
Mix it again just before you go to bed to make sure the seeds don’t clump together.
Step 8
Serve the next morning with plenty of fresh fruit!
You can serve this as a brunch item on its own or add as a topping to porridge or smoothies. Personally, I think its a delicious alternative way to start the day.
Ensure you drink plenty of water during the day to enjoy all the benefits of the chia seeds!
