Ingredients
- Yoghurt
- Blueberries
- Mixed Nuts
- Raw Honey
- Coconut Oil
- Bee Pollen (optional health kick extra)
This tastes like such a treat, you’ll feel like you’re having dessert instead of breakfast. – and better again, if you use coconut yoghurt then you have a paleo friendly meal!
Perfect if you’re trying to stay healthy this week but still want to spoil yourself.
Instructions
Step 1
All your blueberry crunch ingredients… so healthy!
Step 2
Get a nice mix of nuts – anything will do, but we went for almonds, pistachios and macadamia nuts which were delicious.
Step 3
Chop the nuts coarsely, you don’t want them too fine as you need a good bite and crunch to this dish.
Step 4
Add the nuts to a dry pan for a few minutes to toast on a medium high heat. Watch them carefully as they can burn easily, and you’re pretty fecked if they do.
Step 5
When done, add two tablespoons of honey and a tablespoon of coconut oil, then take off the heat. Stir around for around 30 seconds until well combined.
Step 6
Wash and dry your blueberries. Your mam would kill you if she found out you were eating dirty fruit.
Step 7
Spoon your yoghurt in a bowl and top with your blueberries… easy enough.
Step 8
Top with your honey nuts.
Step 9
Sprinkle with the bee pollen if you decided to use it.
Step 10
Enjoy!
