Winter Spiced Fruity Overnight Oats

Ingredients
  • Oats
  • Light Coconut Milk
  • Satsumas
  • Pomegranate
  • Pear
  • Cinnamon
  • Nutmeg (optional)
  • Ginger (optional)
  • Honey

Christmas is one of the most decadent and indulgent months of the year. With an endless stream of Christmas parties, it’s easy to overindulge.
Total Produce Foodservice sent us in a box of their favourite seasonal fruits to experiment with so I came up with this healthy but tasty overnight oats dish.

This brunch recipe is absolutely delicious with richness from the coconut milk, warmth from the spices and sweetness from the gorgeous pomegranates, satsumas and pears.

Instructions

Step 1

Make sure to pick out some really fresh and tasty fruit for this recipe, this will make or break it.

All the ingredients needed are pretty cheap and cheerful.


Spiced-Overnight-Oats-Ingredients

Mix together the oats, coconut milk and spices and let them sit in the fridge overnight in a covered container.

The next morning pour your soaked oats into a bowl, grate in a pear and mix it all together.

Unpeel your satsumas and slice into little bite size pieces.

Scatter the satsuma pieces on top of your oats.

Slice your pomegranate in half and remove the seeds by turning the skin inside out and flicking the seeds off the skin with your fingers.

Scatter the seeds on your oats and add honey too if you want some extra sweetness.

Dig in to a breakfast that is so healthy, you won’t have to feel guilty about having a few mince pies later!
