- 1/2 ball of fresh mozzarella
- Tomato pesto
- Salt & pepper
- Crusty bread
Here’s a brilliant snack to throw together really quickly this evening.
Containing only seven ingredients, this recipe couldn’t be any easier. While it might seem like breakfast fare, it makes for a great snack at any time of day.
Say hello to these cheesy eggs…
Instructions
Step 1
Everything you need apart from the toast, but I’m sure you know what that looks like.
Step 2
Throw the eggs, a spoon of pesto, half a ball of mozzarella, splash of milk, knob of butter, salt and pepper into a pot.
Step 3
Lash the eggs onto an even to low heat and keep stirring them. Use a spatula to get that gorgeous texture, rather than a whisk.
Step 4
Toast and butter your bread. Make sure to splash out on something rustic and decent. Don’t be a cheapskate.
Step 5
Take the eggs off the heat when they’re still a little runny. Nothing worse than eggs that are like sawdust.
Step 6
Don’t freak out that it’s runnier than your usual scrambled eggs, the cheese and pesto make it a little oozier but I promise it’s epic.
So it doesn’t really get much easier than that, does it? 10 minutes for a big tasty dollop of eggs with a difference. Now go give it a lash!
