- 1 Crusty Bread Roll
- 2 Smokey Rashers
- 1/2 Avocado
- Cherry Tomatoes
Honestly, this is the best sandwich I’ve had in ages.
I think the only thing that can possibly improve the classic BLAT (Bacon, Lettuce, Avocado, Tomato) sandwich is the garlic mayo that I’ve added below.
This one was so good that I quickly devoured it, while watching House of Cards. Effort here is pretty minimal, but it tastes incredible. Only caveat here is to get good bread… Cheap sliced pan won’t cut it.
Pop the rashers on some tinfoil and throw them under the grill.
Finely chop a clove of garlic and mix with the mayonnaise… Have a taste and if needed add more chopped garlic.
Slice the tomatoes and avocados.
When the bacon is almost ready, add the bread roll under the grill for a minute or two on each side to warm it through.
Slice the bread and generously smear with the garlic mayo.
Layer in the tomatoes and sliced avocado.
Top with the rashers hot from the grill.
Stuff in some rocket and wedge closed. Eat and enjoy!
Now THAT’s a sandwich.
