The Ultimate Snack - Bacon Stuffed Cheesy Potatoes With Guac And Scrambled Eggs

Ingredients
  • Large potato
  • Eggs
  • Avocado
  • Chives
  • Bacon
  • Chili
  • Lemon
  • Emmenthal cheese

This dish is part breakfast, part brunch and part hangover food. Heavy on the things we all love dearly - avocados, carbs and bacon.

Step 1

The key here is getting really good ingredients so splash out on good bacon.

Start by popping the potato into the microwave, Depending on the size it should take ten minutes - but if you have more time it could go into the oven for an hour at 180C

Roughly chop the avocado and chilli.

Squeeze the lemon on top, add salt and pepper and chop it all up.

The baked potato should be soft to the middle. Use a fork or knife to check.

Cut the potato in half and scoop into a bowl.

This is the assembly stage, so prep everything in one area.

Chop the bacon and lash it into the bowl.

Grate the cheese into the mix.

Chop the chives and add them to the mix.

Pop the mix back into the potato skins.

Grate a little cheese and pop it on top of the potatoes.

Pop the potatoes onto an oven tray and under a hot grill.

Scramble the eggs with a little salt, pepper and chives added at the end.
