What's Christmas without cookies?
Looking to impress your relatives this festive season? This delicious and simple recipe couldn't be easier and combines two of our favourite things - white choc chips and cranberries!
Preheat the oven to 180?.
Place 115g of room temperature butter into a bowl with 100g of Shamrock golden caster sugar.
Add in 110g of Shamrock light muscovado sugar.
Use an electric hand whisk to mix it all up!
Add in one full egg. Mix again.
Fold in 190g of Odlums Plain Cream Flour and 1/2 tsp of Odlums Bread Soda.
Mix thoroughly using a wooden spoon.
Add in some dreamy and creamy white chocolate chips, 140g to be precise. Yum.
And most importantly, add 120g of dried cranberries for a festive touch.
Mix it all up using the wooden spoon again!
Using clean hands, take small balls of the cookie dough mixture and roll it into balls. Then flatten into cookie shapes and place on a lined tray.
Bake in the preheated oven for 25 minutes until the cookies are golden brown and beautiful.
Wait until cooled and then serve with chilled milk. A Christmas miracle indeed!
Bake a few batches and bring them back to the office in the New Year - serious brownie points!
