This Spicy, Baked Eggs Beef And Beans Dish Will Fill You Up For Days


  • 1 head Broccoli, chopped
  • 4 x Eggs
  • 5 x Mushrooms, chopped
  • 1 x Onion, chopped
  • 1 tin Organic Cannellini Beans
  • (400g) drained and rinsed
  • 2 x SuperValu Chillies
  • one red and one green, deseeded and finely chopped
  • 1 tbsp SuperValu Extra Virgin Olive Oil
  • 50 g SuperValu Mature Cheddar Cheese
  • or mozzarella, grated
  • 500 g Tomatoes
  • chopped
  • 300 g lean minced beef

This tasty, nutritious dish is packed with savoury and spicy goodness to fill ‘ye up for the evening. Combining eggs, beef and beans all in one dish will leave your tummy feeling happier than ever.

Step 1

Preheat the oven to 200°C / gas mark 6.

Step 2

Set an ovenproof frying pan on medium heat, and heat the olive oil.

Step 3

Add the beef and brown for 5 minutes, then add the onion, broccoli, chillies and mushrooms. Continue cooking ingredients for another 5 minutes.

Step 4

Stir in the beans and chopped tomatoes and cook for 2 more minutes.

Step 5

Create 4 wells in the mix and carefully crack an egg into each well. Season with salt and pepper (or any of your favourite spices). Here’s when you transfer the pan to the oven, and cook for 5 minutes.

Step 6

Remove the pan from the oven and scatter over the grated cheese. Return to the oven, and cook for 5 minutes more, until the eggs are set to go and the cheese has melted to perfection.
