We bring youuuuuu The Legal Eagle.
Located at 1/2 Chancery Place, Dublin 7, The Legal Eagle will be unusually trading as a very traditional old English pub.
It will have a meaty, old-fashioned style pub menu for downstairs in the bar area serving classical, unadorned food from another era serving things like whole dover and chateaubriand.
Drool.
"This style of food is also very much in the 'nose-to-tail' world of dining but the more we thought about it, the more we realised that 'nose-to-tail' (use every bit and don't waste it) sits alongside a celebration of vegetables very comfortably!
Both are a celebration of produce and we hope to use some lesser celebrated vegetables and vegetable tops etc in our dishes.
We are also making our own crisps (cheese, bacon or smoked tomato anyone?), our own pickled eggs (they're really delish) and even have a DIY crisp sandwich on offer with batch and homemade butter!"

What else to expect?
Well lunch will feature daily changing roast-in-rolls consisting of Irish potato flatbreads filled with the likes of:
Meat will come from a wood oven on traditional meat platter (hay-smoked ham, corned mutton, haslet, pickles and sourdough) and fish will be served on a stand as seen above.
Dinner will showcase unusual delights such as roasted bone marrow, rump heart, cauliflower rarebit, Shropshire Blue souffle and roasted-buttered turnip tops to name but a few.
Ugh, we are counting down the days, hours and minutesssssss 'til we can get our hands on some of these delicacies.
As for drinks?
There will be twenty craft beers on tap, over 200 wines on a stellar list written by Sean Gargano and a small but considered and decidedly un-trendy classic cocktail list.
Wow. Could this be all of our dreams finally coming true right on The Liffey?
An ever-so-slighly formal dining room will open upstairs a little later on in the year. But as of right now, The Legal Eagle will be spreading its wings and opening its doors at the start of August.
So watch this space folks. We have a good feeling about it.
