This Chicken & White Wine Risotto Is Quick, Easy & Positively Divine

Ingredients
  • 2 shallots
  • 1 clove garlic
  • 200ml white wine
  • 300g Arborio rice
  • 1.5 litre chicken stock
  • 50g mascarpone
  • 25g butter
  • 30g parmesan
  • 1 bunch spring onion
  • 1 bunch parsley
  • 1 pack Rustic Rotisserie Chicken
  • Salt and pepper
  • Vegetable oil (small amount)

Instructions

Step 1

Chop shallots and garlic and fry in oil for 5 minutes.

Add rice and white wine.

Add stock and cook until rice is soft, which should take about 15 minutes.

Add butter, mascarpone and parmesan.

Step 5

Add spring onion, diced chicken and chopped parsley.
