Ingredients
- 450g minced beef? or lamb
- 1 tbsp vegetable oil
- 1 diced onion
- 2 cloves of garlic chopped
- ?75g peeled chopped carrots
- ?2 tbsp sriracha sauce
- 1 packet Knorr Meal Maker Shepherd’s Pie
- ?300ml water
- ?700g sweet potatoes peeled and chopped
- 150g parmesan cheese
- 1/2 tin coconut milk
Shepherd’s Pie is a traditional, hearty Irish meal, but we want to take it to a whole new level.
With a topping made from sweet potato, coconut milk & parmesan, this is a Shepherd’s Pie like no other.
Here’s how to make this delicious mid-week meal using the Knorr Meal Maker.
Instructions
Step 1
Firstly start with the sweet potato, placing it in a boiling pot until it softens. Normally takes 10-15mins in salted water. Once cooked drain off all the water and allow to steam. Add in the coconut milk and season with sea salt and mash until smooth.
Step 2
Preheat oven to 190°C/375°F/Gas Mark 5.
Step 3
Stir fry the onion in the oil, add the garlic and carrots and fry until soft, add the minced meat and continue to fry until brown.
Step 4
Mix the contents of the Meal Maker pack with the water and add to pan, bring to the boil, then simmer covered for 10 minutes.
Step 5
Stir in the sriracha, pour into an ovenproof dish. Cover with the mashed sweet potato. Now grate the parmesan cheese over the dish and cook in the oven for 25-30 minutes.
Quick, easy and oh-so-filling.
