This delicious veggie recipe is a quick and easy option for winter gatherings or can even be worked into your routine for a week-night dinner.

Locally grown and currently in season, swedes are readily available in stores and make a very affordable and tasty meal!

Food

Roasted Swedes with Blue Cheese, Honey, and Sage,

Ingredients

  • 2 large swedes, cut into good-sized chunks
  • 1 tbsp rapeseed oil
  • 1 tbsp honey
  • 1 tbsp melted butter
  • 15 sage leaves
  • 2 tbsp blue cheese

Method

Prepare the Swedes: Cut the swedes into equal-sized pieces to get an even cook. Toss them in a bowl with the rapeseed oil and melted butter until evenly coated.

First Air Fry: Preheat your air fryer to 200°C. Add the swede chunks to the basket and cook for 10 minutes, or until they are lightly coloured and beginning to soften.

Add Honey and Sage: Remove the swedes from the air fryer and toss them in a bowl with the honey. Return them to the air fryer, along with the sage leaves, and cook for another 10–15 minutes. The swedes should become caramelised, and the sage leaves should crisp up beautifully.

Finish with Blue Cheese: Once cooked, pour the roasted swedes and sage into a serving bowl. Crumble the blue cheese over the top while everything is still warm, allowing the cheese to melt into the swedes. Serve immediately and enjoy!

A Dish for Every Occasion

This recipe fits perfectly on any dinner table, whether you’re serving it as a side with roasted meats or as a stand-alone vegetarian option. The sweetness of the honey, the creamy blue cheese, and the crispy sage leaves bring a satisfying mix of flavours and textures that’s sure to impress.

Looking for something quick and comforting after a busy day? This dish is simple enough to make midweek, and the air fryer does most of the work. Pair it with your favourite drink and let it warm you up on a cold winter’s evening.
