It takes centre stage in this recipe, proving just how impressive and flavour-packed winter vegetables can be with minimal effort. Miso is a nutrient-rich fermented soybean curd (made into a paste) which has associated health benefits, while also imparting a great depth of flavour to dishes. In using miso paste with cabbage, the miso glaze brings a perfect balance of savoury depth, subtle sweetness, and crisp caramelisation that steals the show.

Add this as a bonus to the nutritional benefits of cabbage and you have a nutrient-rich dish. Quick to prepare and stunning to serve, it’s ideal for busy evenings or special occasions, when you need big results with little fuss.

This is not cabbage as you’ve known it, it’s a winter revelation. The flavour-packed miso glaze takes cabbage on a Japanese fusion journey, turning it into a show-stopping side or the centre of a wholesome meal. Finish with toasted sesame seeds, scallions, coriander, crispy garlic chilli, shoestring potatoes or even chilli beef for a visually stunning final touch.

What to put on the Shopping List

  • 1 head sweetheart cabbage, quartered
  • 30g miso paste
  • 1 clove garlic, minced
  • 10g fresh ginger, finely grated
  • 10ml soy sauce
  • 20g brown sugar
  • 1 lime, juiced
  • 20ml rice vinegar
  • 40ml sesame oil

The Method to the Madness

  1. Prep the Cabbage: Heat your air fryer to 210°C. Halve the sweetheart cabbage, then cut it into quarters, leaving you with beautiful wedges that are perfect for soaking up the glaze.
  2. Make the Magic Sauce: Combine garlic, ginger, lime juice, miso paste, soy sauce, rice vinegar, sugar, and sesame oil in a bowl. Mix until smooth and fragrant.
  3. Brush and Roast: Arrange the cabbage wedges in the air fryer basket, ensuring they have space to crisp up. Generously brush each wedge with the miso marinade.
  4. Cook to Perfection: Roast for approximately 35 minutes until the cabbage edges are golden and caramelised. Serve immediately for maximum impact.
