Five Perfect Pride Recipes If You’re Hosting A Get Together This Year

On Saturday June 30, our city streets will be awash in all the colours of the rainbow for Dublin Pride 2018… but what about your kitchen?

Taking part in the biggest spectacle of the year requires a lot of energy, so be sure you’re well fuelled up for the festivities with food that’s just right for the occasion.

That means lots of colour and lots of flavour.

We’ve assembled an assortment of recipes that have something for breakfast, lunch, dinner and dessert — as well as a something to sip on after you’ve had your fill of food.

1. Stack of rainbow pancakes

Ingredients:

  • 2 eggs
  • 2 tablespoons oil
  • 6 tablespoons sugar
  • 1 cup milk
  • 1?2 teaspoon vanilla extract
  • 2 cups cake flour
  • 3 teaspoons baking powder
  • Food colouring of your choice
  • 1 can icing
  • 1 tablespoon milk
  • 1 tablespoon water
  • Sprinkles

Recipe:

  1. Sift your cake flour, salt and baking powder together.
  2. Mix up eggs, sugar, milk, oil and vanilla extract in a bowl.
  3. Add in the sifted flour mixture.
  4. Divide the batter evenly among the number of colours you intend to use, add the food colouring to each and mix thoroughly.
  5. Lightly oil your frying pan and place on medium heat.
  6. Add your batter and cook your pancakes on both sides.
  7. As your pancakes cook, mix your readymade icing with milk and water until smooth.
  8. When your pancakes are cooked, stack them high and pour your icing over them.
  9. Top them all off with sprinkles and you’re ready to tuck in.

2. Rainbow spaghetti

Ingredients:

  • 1lb dry spaghetti
  • Food colouring of your choice
  • 1 cup shredded Parmesan cheese

Recipes:

  1. Cook your pasta al dente.
  2. Combine about two tablespoons of water and 20 drops of food colouring in plastic sandwich bags, using one bag for each colour.
  3. When the pasta is ready, transfer it to a large strainer to drain before rinsing with cold water.
  4. Divide your pasta evenly among the bags of dye. Use your hands to thoroughly mix the colouring into the pasta before leaving each bag for one minute to allow for the colour to soak in.
  5. Transfer one bag of pasta at a time to the strainer and rinse with cold water to remove excess colouring, before transferring the pasta back in its original pot. Repeat this process with every bag of coloured pasta and toss all the pasta back together to combine the colours.
  6. Add Parmesan to taste.

3. Rainbow layer cake

Ingredients:

  • 375g butter
  • 675g plain white flour
  • 450g caster sugar
  • 9 eggs
  • 3 teaspoons baking powder
  • ¾ teaspoon salt
  • 3 teaspoons vanilla extract
  • Food colouring of your choice
  • 350g butter
  • 700g icing sugar
  • 2 teaspoons vanilla extract

Recipe:

  • Preheat the oven to 180°C (fan 160°C) before greasing two round baking tins. You’ll bake two sponge layers at a time and make a total of six layers for the cake.
  • Put 125g butter, 225g flour, 150g golden caster sugar, 3 eggs, 1 teaspoon of baking powder, ¼ teaspoon salt and 1 teaspoon of vanilla extract into a large mixing bowl and beat until smooth. Split this mixture in half to make your first two layers.
  • Put the two halves of batter into separate bowls, add your chosen colour and mix thoroughly until you’ve got the right shade.
  • Pour your batter into the tins and place in the oven for about 12-15 minutes.
  • Remove the sponge from the oven and leave aside to cool on a wire rack.
  • Repeat this process for the other four layers using the remaining colours.
  • Once the sponge is complete, it’s time to make the buttercream. Beat the butter and icing sugar until fluffy, then add the vanilla extract.
  • Smear a little of the buttercream onto your cake board and place the first layer at the centre.
  • Spread buttercream on top of this layer and carefully stack your next sponge. Repeat this process for the rest of the layers.
  • Once fully stacked, smear a thick layer of buttercream around the outside of the cake.
  • Give the cake an hour to set then it’s ready to eat.

Rainbow Layer Cake

4. Rainbow ice-pops

Ingredients:

  • 1 cup sugar
  • 1 cup water
  • 2 tablespoons light corn syrup
  • 2 cups pomegranate juice
  • 3 cups lemonade
  • 1 cup orange juice
  • Food colouring
  • Ice pop molds (paper cups will also work)
  • Ice pop sticks

Recipe:

  • Heat the sugar and water over medium heat in a small sauce pan, stirring until the sugar has dissolved. Remove from heat and stir in the corn syrup, then set the mixture aside to cool.
  • Create your red layer by combining 1 cup of pomegranate juice, 2 tablespoons of simple syrup and 2 drops of red food colouring.
  • Create your orange layer by combining 1 cup of orange juice, 2 tablespoons simple syrup, 1 drop of red and 1 drop of yellow food colouring.
  • Create your yellow layer by combining 1 cup of lemonade, 2 tablespoons of simple syrup, and 1 or 2 drops of yellow food colouring.
  • Create your green layer by combining 1 cup of lemonade, 2 tablespoons of simple syrup, and 1 or 2 drops of green food colouring.
  • Create your blue layer by combining 1 cup of lemonade, 2 tablespoons simple syrup, and 1 or 2 drops of blue food colouring.
  • Create your purple layer by combining 1 cup of pomegranate juice, 2 tablespoons of simple syrup, 2 drops of blue and 1 drop of red food colouring.
  • Pour the red layer into your ice pop molds (or paper cups), to about one sixth of the mold’s length and put it in the freezer for 30 minutes. Add the orange layer and freeze for another 30 minutes. At this point place the sticks in the centre, pour in the yellow layer, and freeze for another 30 minutes. Add the green, blue, and purple layers in the same fashion. Allow the popsicles to freeze for at least 3 hours, but overnight is best.

Rainbow Ice Pops

5. Smirnoff Soda Fruit Smash

Ingredients:

  • 50ml of Smirnoff No. 21 Vodka
  • Schweppes Soda Water
  • Ice
  • 1 lime/1 grapefruit/1 orange (whatever fruit takes your fancy!)

Recipe:

  1. Fill a highball glass with ice.
  2. Pour 50ml of Smirnoff over the ice.
  3. Firmly smash half of your chosen fruit into the glass. Add Schweppes Soda Water to the mixture.
  4. Garnish your glass with a wedge of lime/grapefruit/orange.
