Forget A Fry Up This Morning – Try Out These Amazing Avocado Eggs

Ingredients
  • 3 Eggs
  • Brown Bread
  • 1 Avocado
  • 1 Lemon
  • Cherry Tomatoes

When it comes to breakfast at the weekends we all usually go for fatty meats and huge portions; either a treat, or to soak up the hangover.

With this recipe I wanted to make something wholesome that tastes fucking awesome but made you feel healthy. This only has 5 ingredients so it’s incredibly easy to put together and it tastes absolutely gorgeous…

Instructions

Step 1

5 Simple ingredients and not a piece of meat in sight. The key here is making sure the avocado is perfectly ripe, don’t pick the shitty hard ones the supermarkets try to flog you.

Step 2

Chop the tips off the avocado so that it balances on the chopping board.

Step 3

Run your knife around the outside removing the skin and as little of the flesh as possible.

Step 4

The avocado should be as ripe as possible, that will make it super easy to peel.

Cut it in half.

Chop it in to even big chunks and season it up with some salt and a generous amount of black pepper in a small bowl.

Step 7

Lash in the juice of a lemon and stir it all up before setting it to one side.

Use the largest pan you have, (non-stick if possible!). Lash on a good bit of oil on a medium heat.

Step 9

Fuck in the tomatoes with the vine still on – it has loads of flavour, and keeps them all together for nicer presentation.

Slice up the bread – it’s up to you if you want to toast it or not. (I did!)

Crack three eggs into a bowl.

Throw on a bit of salt and pepper, stir them up with a fork.

When the tomatoes start to get soft whip them off the heat.

Let them cool down and place them onto the plate.

Using the same pan on a medium heat lash in the eggs.

You’ll want to start stirring them immediately. Eggs don’t take long to cook, about a minute max.

Take them off the heat just before they are fully cooked – there’s nothing worse than overcooked scrambled eggs.

Plate it up with the tomatoes and the bread on the plate first.

Lash the eggs on top and them a big scoop of the avocado. It looks as pretty as a picture!

So there you have it! Who thought a veggie breakfast could look and taste this good?

I’m not saying that you never have to have a dirty big fry up ever again, but it makes a nice change every now and then. The fact that you can lash it together in a couple of minutes makes it a huge winner for the weekends.
