Whopper Veal Schnitzel With Egg And Crispy Spuds

Ingredients
  • Veal Escalope (ask the butcher to cut it nice and thin)
  • 1 Lemon
  • Flour
  • Breadcrumbs
  • 2 Eggs
  • Potatoes
  • Chili flakes
  • Purple sprouting broccoli (or regular if they don’t have it)

You don’t see many people cooking veal in Ireland, mostly due to the fact that there isn’t much of it on sale here as there would be on the continent. Without getting into the moral debate about how the animals are reared, I wanted to cook up a quick recipe and show you how simple and delicious veal is to cook. I found my veal in Fallon and Byrne but more and more places are starting to stock it. This takes 15 minutes to cook from start to finish and it tastes absolutely fucking whopper…

Instructions

Step 1

The ingredients are all pretty easy to get your hands on. Ask your local butcher because many of them are starting to stock veal and, if not, they’ll certainly be able to order it for you.

Step 2

Peel the potatoes and cut them into even sized little cubes. It’s important that they are the same size so as the little bastards all cook at the same speed.

Step 3

Lash on a big frying pan with a good glug of olive oil. Fuck in the potatoes with a good sprinkle of chili flakes. The hotter you want it the more you should add- obvious really!

Prep up the broccoli, you only want the flowers so trim away the woody stalks.

Step 5

Putting the breadcrumbs on the veal is simple, but it’s important to do this fresh. It will make all the difference. Lay out three plates – one with flour, one with a beaten egg and the last one with breadcrumbs.

Step 6

Fuck the veal into the flour, shake off any excess and then throw it into the egg. Again shake off any excess egg and lastly throw it into the breadcrumbs – you’ll see it sticks perfectly. You could use this bread crumbing technique for pretty much anything (chicken, fish etc).

Step 7

When the potatoes are starting to brown up and get crispy on the outside but soft on the middle lash in the broccoli. Keep it tossed around at all times.

Lash in the veal at this stage. Because it is so thin it should cook in about 3 minutes max. on each side at a medium heat.

When it is golden brown flip the bastard over and do the same on the other side.

Whip the veal out and throw an egg into the pan. If I need to tell you how to fry an egg chances are you haven’t gotten to this step without burning the house down anyway!

Serve it all up straight away. Just add a simple big wedge of lemon (essential) and you have one of the quickest most epic little dinners you are ever likely to taste!

You don’t really get much simpler than that! Because the meat is so thin it only takes about 15 minutes to cook this from start to finish, and you’ll be amazed at how idiot proof the recipe is once you’ve cooked it. Lash on a couple of frying pans and give this veal recipe a try. There’ll be no looking back once you taste this!
