Bold, But Not Really Bold – Sweet Potato Wedges With Whipped Feta, Lemon And Black Pepper Dip

Ingredients
  • Sweet potatoes
  • Feta cheese
  • Lemon
  • Chili flakes
  • Thyme
  • Natural yoghurt
  • Black pepper

When it comes to eating healthy, the struggle is real. 

You usually manage to get a few good days in where you’re on the straight and narrow before you end up cracking miserably and indulging in your favourite filthy treat. 

That’s why I wanted to come up with something that wasn’t especially bad for you, but still tasted bloody amazing. 

These aren’t quite sweet potato fries with a fatty dip, but they taste every bit as good. Get stuck in…

Instructions

Step 1

The beauty about this recipe is that you don’t need many ingredients and it’s ready in less than 30 minutes with little to no prep.

Step 2

Give the sweet potatoes a good wash and chop them in half lengthwise.

Step 3

Next up you want to chop them into wedges. The key is making them all even in size, so as they’ll cook at the same speed.

Step 4

Lash them into an oven tray with a good handful of the thyme leaves, some chili flakes, olive oil and a good dusting of salt. Toss them all around and lash them into the oven at 200 degrees for 30 minutes. You’ll want to toss them around a couple of times to make sure they’re not sticking.

Step 5

While the sweet potatoes are cooking, make the dip in a large bowl. Lash the feta cheese in with a load of black pepper (be super generous) and some olive oil.

Step 6

Add a couple of spoonfuls of natural yoghurt in. This helps to make it into more of a sauce.

Step 7

Add the juice of the lemon into the sauce. Again this gives it a savage kick.

Step 8

Whip the sauce up using a fork. You don’t want it to be super smooth, as the feta gives it a lovely texture, but semi smooth so it spreads out over the sweet potatoes.

Step 9

When the potatoes are crunchy on the outside and soft in the middle, whip them out of the oven.

Step 10

Pop them on the plate. These would work brilliantly as a side dish as well.

Step 11

Spoon the sauce over the sweet potatoes and serve them up immediately.

You’ll never come up with a quicker treat to make for yourself during the week and these taste absolutely amazing. Grill yourself up a chicken breast or some fish to go with these and you’ll still be eating well but won’t be craving that fatty treat either.
