Protein Packed Bacon and Red Pepper Omelette

Ingredients
  • 2 eggs
  • Milk
  • Lardons/ bacon pieces (smokey is best)
  • Red onion
  • Red pepper
  • Fresh basil
  • Garlic

Sometimes when you come home late from work, you’re just not arsed making something from scratch, and if you don’t have a few quick recipes on hand it can be all to easy to ring in a takeaway.

When you’re eating healthily, it can sometimes be harder to make something at bullet speed that’s still nutritious. Having a few fool-proof super quick recipes on hand makes life so much easier.

This takes about 10-15 minutes and is really quick, easy and healthy. It’s low carb and packed with protein for anyone trying to be good at the moment.

Instructions

Step 1

Line up your ingredients. I would say this is the easiest part but I did forget to line up the basil…

Chop your garlic, onion and red pepperc

Step 3

Fry in a little oil on a medium heat until soft.

Step 4

Add the bacon bits.

Keep stirring until all are cooked through and the vegetables are nice and soft, season with salt and pepper.

Whisk the eggs with a splash of milk and some salt and pepper. Then pour a little oil into a small frying pan and pour the egg mix on top

Tear up some fresh basil leaves and plop on top.

The key to the perfect French-style omlette is as soon as you pour the egg mix on the pan, use your flipper to pull some of the egg back from the sides. The wet eggs mix will quickly fill back the space you made, do this a couple of times around the pan. It means the omlette will be light and gorgeous, not solid and rubbery. It also speeds up the cooking time.

Step 9

When the omelette is almost set, pour the bacon and veg mix on top of the omelette.

With your flipper fold over half of it and leave it on the frying pan for another minute or two.

Serve on a warm plate (egg can go cold really fast, so don’t chance a cold plate) and sprinkle some basil on top for dramatic effect. As you can see this is rammed with fillings, but it’s all healthy. And the more veggies and bacon you add to the mix, the more satisfied you’ll be afterwards- no need to reach for the biscuit tin!
