The Healthy Mid-Week Fry Up

Ingredients
  • Really Good Bacon
  • Eggs
  • Grain Bread Or At Lest Brown Bread
  • Ballymaloe Relish

This blog is all about shattering the normal food perceptions as well as coming up with dishes that you can lash together to suit your daily life. A fry up is something that we have at the weekends and that is greasy and thrown together when you have the leisure of many hours of spare time right? Wrong! Why shouldn’t we enjoy a little treat during the week and make it so as it isn’t that unhealthy at all? This is so simple that it only has 4 ingredients, is ready in about 15 minutes and is a perfect treat for a midweek. Screw the normal weekday schedule. Tell the boss you missed the bus and get to work 10 minutes later to enjoy one of these bad boys…

Instructions

Step 1

You really can’t find easier ingredients than this especially as one of them comes in a jar and all you have to do is scoop it out!

Slice the bread. Make sure to not be a tight fucker and splash out for a half decent one.

You’ll need 2 pans. One chargrill pan and one little pot of water which you bring to the boil. Maybe lash the water on and go jump in the shower or do whatever it is you do in the mornings.

Step 4

The absolute key to poaching these eggs and a secret little chefs trick is a little dash of white wine vinegar. It holds the eggs together.

Fuck on the bacon. Again splash out on a good bacon.

Lash the bread into the toaster. Don’t really need to explain that step to you in any more detail than that!

Step 7

Now the key to poaching is getting the water at the right temperature. Bring it to the boil and then turn it down to a medium to low heat. Poaching is at about 97C so just have it gently simmering.

Another tip is to use a spoon to swirl the water around in a circle.This will help give the egg some seriously good shape.

Step 9

Crack the egg in and cook it. It will take about 90 seconds to 2 minutes to cook and while it does assemble the rest of the dish. Put both eggs in at the same time by the way.

Bread on the plate first.

Smear a good bit of the relish onto the bread. This makes it way healthier than butter.

Fuck on the bacon.

Use a slotted spoon (one with holes in it) to strain all the water off and strain the egg.

Pop them up on top.

So there you go. Who said that you could only have food like this at the weekend. We all sprint around leading mental busy lives but could we not just take 10-12 minutes to cook a good wholesome dish like this once a week?
