The Perfect Dinner For A Summer’s Day – Open Sandwich With Smoked Chicken, Sun Dried Tomato And Pine Nuts

Ingredients
  • 1 Packet Of Smoked Chicken
  • Rocket Leaves
  • Crusty Bread
  • Mayonnaise
  • Sundried Tomatoes
  • Pine Nuts
  • Fresh Basil

The weather’s beautiful outside, so the last thing you want is a big heavy dinner this evening.

This sandwich is a perfect alternative to meat, carbs and two veg – it’s totally flavoursome and really easy to put together. Whip one up with a side salad for dinner tonight!

Instructions

Step 1

You can get smoked chicken in good delicatessens like Fallon & Byrne or Morton’s.

Step 2

Chop all the chicken up including the skin in to nice chunky cubes.

Step 3

Chop the sun-dried tomatoes up – try to get them from the deli counter too, because the ones in jars aren’t great.

Step 4

Pick all the basil leaves away from the stalks.

Pile them all up in to one little pile so as they are easier to chop

Slice all the basil up as thinly as you possibly can.

Fuck all the ingredients into a bowl to mix it all together.

Add a heaped tablespoon of mayo to help bind it all together.

Step 9

Slice up a few pieces of bread depending on how hungry you are and how many you are cooking for.

Lash on a pan on a medium heat but don’t put any oil it at all.

Pop the pine nuts in to the dry pan. This process is going to be very very quick, and nothing burns more easily than pine nuts so be careful here.

While they are heating up dribble a little bit of oil on to the bread.

Keep the pine nuts constantly tossing around the pan. They will cook really quickly and you want to get the golden brown all over so keep tossing!

They should look like this, and remember that with the heat of the pan they will keep cooking a little even after they have been taken off the heat.

Once they cool down lash them in to the rest of the mix.

Fry the bread in the same pan as the pine nuts, and give it a couple of minutes on each side so as it is golden brown all over.

Start plating it all up by placing the bread down first.

Lash on a few rocket leaves – there’s no need to add dressing as the mix will be wet enough.

Lash a good big scoop of the mixture on top and serve it all up straight away.
