Pimped Out Open Sandwich With Wild Mushroom, Kale, Salami And Feta

Ingredients
  • Really good sourdough bread
  • Wild mushrooms (I used Girolles but Shiitake would work)
  • Feta cheese
  • Kale
  • Lemon
  • Avocado
  • Good quality salami

When somebody asks if you want a sandwich you invariably think of a couple of boring pieces of bread with some unimaginative filling..

For the most part, sandwiches are the easiest way to fill ourselves at lunchtime but they rarely blow your mind. I wanted to take things to the next level by creating a sandwich to rival all sandwiches. It is actually remarkably easy to make whilst only featuring 7 ingredients – is as good as life gets!

Instructions

Step 1

I always bang on about it but the really good ingredients are essential. Go into one of those amazing shops that have all the high end stuff. It means rather than any fancy cooking techniques all you really have to do is assemble!

Step 2

Pick the stalks out of the kale. The mushrooms should be clean already – whatever you do don’t wash them as they absorb all the moisture and go to shit. Use a damp kitchen towel to brush them off if you need to do anything.

Step 3

Lash on a frying pan with some olive oil on a good high heat and throw in the mushrooms.

Step 4

After about a minute lash in the kale. Keep them all moving, they shouldn’t take more than 2 minutes for them all to soften up.

Step 5

You want that deep rich brown colour. Seasoning is crucial at this stage, be generous with salt and pepper.

Step 6

Cut the lemon in half and squeeze it in and then whip the pan off the heat! Believe it or not, that’s the whole cooking part done…

Step 7

Slice up a couple of big thick slices of bread. You can either throw them into the toaster or under the grill with a drop of olive oil.

Step 8

Peel the avocado, remove the stone and lash half the lemon onto it. This is why it is so important that you have a fresh ripe avocado. Those rock hard ones would be useless for this recipe so invest in the best! Sprinkle the avocado with a little salt.

Step 9

This is what the fancy restaurants and cafés call “smashed” avocado. Basically just use the back of the knife to smash it up into a sort of chunky paste.

Crumble the feta into the mushroom and kale mix, which should be sort of room temperature by now.

Step 11

Smear the smashed avocado onto the bread.

Tear up the salami (or whatever nice meat you’re using).

Finish with the warm mix and serve it up immediately. Get in my belly!

They key here is that all the ingredients are super high quality. I’d see this as a bit of a brunch dish or even a fancy evening dinner for a couple of friends that you wanted to impress. Having said that it is ready in less than 15 minutes so you could have it all to yourself. Either way, it tastes absolutely fucking amazing!
