Spicy Brunch Burritos

Ingredients
  • Flour wraps
  • Tin of black beans
  • Bacon
  • Potatoes
  • Chili
  • Tomatoes
  • Cheddar cheese
  • Garlic

Today we’ve combined two of the greatest things on earth (brunch and burritos) to come up with a classic recipe that is made for the weekend. You could go with a late lunch or depending on the level of your hangover even cook these bad boys up late in the afternoon. The recipe is absolutely perfect for a big group of people and if you do end up cooking these for your friends watch their faces as you carry out a big tray of these! Delish.

Instructions

Step 1

The ingredients are all simple enough and even though you could save time and buy some salsa making it from fresh is so much better!

Step 2

Start off by making the salsa. Its quick and simple and the kick it gives the recipe is essential. Chop the shit out of the garlic and the chilli

Lash them on to cook slowly in a pot with a good amount of olive oil. Nice and slowly here

Cut the tomatoes in half. If I have to explain that to you and you are struggling probably better just giving up now!

Step 5

Squeeze the juice out of the centre. All we are looking for is the nice flesh for the salsa

Chop the bastards up into little pieces

At this stage the garlic and chilli will have a lovely flavour so fuck in the tomatoes and turn the heat up a little

While the salsa is cooking peel the potatoes and chop them up into even sized little pieces

Step 9

Lash on a big frying pan with some olive oil. When it heats up fuck in the potatoes.

Keep the potatoes stirred so as they don’t stick to the bottom and once they start taking on some colour lash in the bacon

Step 11

Cook the bacon for a couple of minutes and when it starts getting crispy lash in some of the black beans. Make sure to strain off the juice they come in first.

After a couple of minutes of cooking the mix push it all over to one side of the pan and lash in a couple of eggs to fry.

At this stage the salsa should be done. Wasn’t fucking rocket science making that was it?

Heat the tortillas up. I do mine in a little pan for about 20 seconds but the oven or even microwave work just as well for this.

Time to assemble the whole thing now. Get a little production line going.

Lash a good bit of the salsa on first. This is the glue that will hold the bastards together

Lash on the mix. Not too much though as you need to roll these bad boys up at the end!

Big dollop of cheese which will melt down into the mix with the heat.

Fuck the fried egg on top. The yolk will help bind the whole thing as well

Roll the bastards up and tuck them in and serve immediately! Delish!

You are not going to believe just how good these bad boys taste! The chilli gives the whole thing a savage kick and all the important weekend food groups are in there! The other great thing here is that you can make about 6 portions for about 15 Euros which is a shit load cheaper than you all going out for brunch and it costing over 100 Euros. Give these a whirl and prepare to be a convert to brunch burritos!
