Super Tasty Open Italian Sandwich

Ingredients
  • 1 Packet of lambs lettuce (Rocket would also do)
  • 3 Ripe figs
  • Small mini mozzarella
  • Sliced prosciutto (thin as possible)
  • Balsamic Vinegar
  • Nice crusty brown baguette
  • Few Basil leaves

I often get home from work late and by the time I have showered and done all my chores, the last thing I can be bothered doing is cooking a big meal.

Having said that after a hard days work I’m usually starving, so this dish is made with all that in mind. It’s quick and easy but still really filling. The key is to get really good quality ingredients, as well as nice fresh bread because then it will be bursting full of flavour. Mouth-wateringly fucking gorgeous.

Instructions

Step 1

The ingredients are not the cheapest, but it is really worth spending a little extra to get the best of the best.

Step 2

Slice the bread in half and get it in to the toaster. You don’t to get it golden brown but just gently warming it up.

Step 3

Get your figs out. These should be nice and soft to the touch, almost mushy.

Step 4

Cut them in to quarters and gently remove the skin using a sharp knife and keeping as much of the delicious flesh intact as possible.

The key is getting them when they are perfectly ripe, because they are just gorgeous.

Step 6

Get all your ingredients out on to the chopping board. Strain off the mozzarella balls so as they are nice and dry.

Step 7

Just use your hands (make sure they are super clean) to roughly break up the mozzarella.

Step 8

Lash a bit of olive oil in to a bowl

Pour in about half the amount of balsamic

Whisk the two together with a fork – I bet that’s the quickest fucking dressing you will ever make!

Step 11

Give the lambs lettuce a quick toss around in the dressing but don’t be too heavy-handed.

Throw the bread (which should be still warm) on to a plate with a little drizzle of oil over the bread.

Lash the salad on followed by the ham.

Pop the mozzarella on next, nice and gently so as you keep all the lovely textures intact.

Dice the basil up into thin little strips.

Sprinke the figs and the basil over the top of everything.

Drizzle any excess dressing over the top.

Thats it. The quickest tastiest sandwich you’ll ever make. Don’t make it too far in advance because it needs to be served nice and fresh.

So there you go a sandwich that is tasty and filling enough for dinner, and that looks as if it has just come off the pages of some high-end cookbook.

With just 7 ingredients you can lash this together and look like a pro in no time. You are not going to believe how amazing this tastes, and just how quickly it will be ready! Epic.
