Rollover Chicken Fillet

  • Mozzarella
  • Chicken
  • Breadcrumbs
  • Baguette
  • Rocket
  • Tomato sauce
  • Eggs
  • Flour

We’ve been writing a lot about brunch recently and there are a ton of great places to have it in Dublin but making your own at home can be an even better option. This is hungover food that is easy to lash together and will feed a bunch of you in minutes. The dish was inspired by the world famous Spar chicken roll just pimped up a little to take it to the next level. Seriously delicious and guaranteed to kill a hangover within minutes or to give you the substance to rollover and go again.

Instructions

Step 1

The ingredients are super simple to find and pretty cheap. The only thing I’d say is splash the cash on the mozzarella and get a good one rather than plastic shit most supermarkets sell. It will make all the difference

Step 2

Grab the chicken fillets and using a sharp knife cut them into super thin pieces. The thinner the better because you want them to cook super fast

Step 3

The biggest bit of prep is getting the chicken breaded. Three plates one with a couple of eggs on them and beaten together. You also want the flour on a second plate and the breadcrumbs on a third.

Lash the chicken into the flour and give it good dusting to get rid of any excess

Then pop it into the egg mix.

Last of all fuck it into the bread crumbs

Your chicken should look like this. You’ve probably had breaded chicken before but never anything that tastes this good.

Lash a big frying pan on and throw in a good glug of oil

When it warms up throw the chicken in. Cook it nice and slowly rather than a high heat.

Cut the baguettes up. I really don’t have to explain this step to you.

Turn the chicken over. It should be lovely and golden brown. It will only take about 4 minutes on each side to cook

Lash the sauce into a pan. I got a really nice Italian one that had a bit of a kick to it. You could make your own sauce but chances are you have a hangover and can’t be fucking arsed.

Drain the water away from the cheese and slice it up.

You’ll be at this stage now and you’ll want to just bring the whole thing together

Lash the sauce onto the chicken. Don’t be fucking shy

Throw the cheese slices up onto chicken

You could toast the bread or pop it under the grill but I think having it soft is a great contrast to the crispy chicken

Lash the chicken under the grill, into the oven or back on the hob for a couple of minutes to melt the cheese. Then just fuck it into the bread rolls and away you go!

Its not a complicated dish and it doesn’t take long to cook but the combinations are insanely good and it really is perfect for the weekends.

You have to taste this to believe just how good it is. Cooking good food couldn’t be much easier and if you lash this together you’ll be blown away at your own ability to cook great food. Grab a couple of breasts, some great bread and knock this little beauty out of the park.
