Is there any sambo more filling, comforting and cripplingly guilty than the grilled cheese?
A simple but brilliant concept from our friends in the States – cheese and bread.
And this Dublin food stand are revolutionising the American delicacy.
Get away from me with that boring sad and cheese toastie — this life-changing grilled cheese is what you need.
There is currently nothing like this in Dublin. All ingredients are locally sourced and combined to make these beautiful sandwiches.
Who: a husband and wife duo with a real cheese obsession. Lee and Kathy both work full-time and run the Nice N Cheesy stall on Sundays.
When: Sundays from 10am until 4pm.
Where: Herbert Park, Ballsbridge, D4.

What: locally-sourced, freshly-made-and-grilled cheese sandwiches made with sourdough from The Firehouse Bakery, top secret cheeses from Wicklow and Cork and bacon from Farrellys butchers in Delgany.
Owner Lee says that it is the combination of all these things, but in particular the two cheese used, that makes their flavours super delicious and unique, that it sets their grilled cheese apart from all other sandwiches.
Each sandwich is made fresh at the market and how they prepare and grill them is what gets us really excited.
The outside of sourdough sandwich is covered with butter and placed on the grill, then heavy cast iron weights are placed on top of the bread to toast and crisp the bread and reaaaally get that cheese melting.
They also do delicious monthly specials that switch up.
In previous months they've made Clonakilty black pudding and apple sauce grilled cheese, a guacamole and crispy bacon grilled cheese and a mac 'n' cheese grilled cheese.
Nice N Cheesy hope to expand in the future and are hoping to set up a food trailer so that they can work lunchtime markets throughout the city and cater events and weddings.
