I’ve never done anything like this before. It was an eye opener, I can tell you that. The only place kind of similar is the Happy Pear which is vegetarian. I am a foodie, I eat all the time. And I said there was nowhere in Bray if you wanted healthy food. That’s why I decided to do this. I do work here a lot but it’s the girls behind the counter and Rachel that make all the food. It’s all home-made. I wouldn’t know how to turn on a cooker to be honest.

There is Mayweather, Ali and Tyson. It’s in a good location, we get good footfall from people on the way to the Dart. It’s all juices, smoothies, proteins. I created the menu myself. It’s all boxing names like Pink Panther and Mike Tyson. There is nothing quite like this in Bray. It complements the gym. It’s ideal for the boxers and the keep-fit people. We haven’t officially launched yet but in January we hope it will really take off when everyone goes on their health buzz. We are getting a good response from local gyms and are starting a delivery service soon and we will be delivering meals to the gyms. And people can order their meals for the week. People seem to love the no-prep part of it. As you can see it’s all boxing orientated. The name gives it away too.Sounds like a sensational venture for the boxing coach. The new café will open officially in January, just in time for everyone's annual health kick. Hurray!
