Savage Sausage Frittata

Ingredients
  • Guinness Sausages (or a nice chunky alternative)
  • Potatoes
  • Baby carrots
  • Red onion
  • Rosemary
  • Thyme
  • Eggs
  • Rocket

We all love a good brunch, but rather than heading out and spending a fortune this week, I thought I’d come up with a recipe that would be super easy to cook in the comfort of your own home.

The beauty here is that it’s all cooked in one pan and there’s minimal prep involved. I used the new Guinness Sausages in this recipe which give it a big robust flavour, but if you can’t find them some nice strong pork and leek will do as an alternative. 

Give this a lash and watch the person you share it with light up with happiness when they taste it. 

Instructions

Step 1

You’ll find all the ingredients easily, it’ll cost you less than a tenner and feed 2-3 of you.

Step 2

Peel the onion and pluck the leaves away from the stalks on the rosemary and the thyme.

Step 3

Slowly cook the sausages in a frying pan with a small amount of oil. Gently does it when it comes to sausages.

When they’re starting to turn golden brown around the edges, throw in the onion and herbs. You’ll want to keep it all moving at this stage, gently cooking them. That smell should be good enough to rouse anybody out of bed who isn’t up already.

Step 5

Peel and chop up the carrots and potatoes. Keep them small enough as you want them to cook relatively quickly.

Step 6

Lash them into the pan. You can turn the heat down to a low to medium heat at this stage. You want them to cook for about 8-10 minutes so the potatoes and carrots are softening up.

While the mix is cooking on the stove, whip the eggs up in a bowl and season with salt and pepper.

Step 8

At this stage the sausages, potatoes and carrots should be cooked and it’s time to quickly finish the dish.

Step 9

Pop the egg mix in on top. Because you’re using the non-stick pan you don’t need to do much from here on in. Let it cook for about 2 minutes on the stove so you see things starting to set.

Step 10

The bottom will be setting while the top is still runny. This is when you whip it off the heat.

Step 11

Lash the pan under a hot grill. This is the secret and it should only take about 30 seconds at this stage.

Step 12

With the whole thing pretty much set, with a tiny bit of ‘give’ left when you shake the pan, whip it off and finish it with scattered rocket on top.

Step 13

Serve it up family style in the middle of the table, so your fellow eaters can help themselves.

You really won’t cook anything much easier or more tasty than this. It works for breakfast, brunch, or even a nice outdoor lunch when the weather picks up a bit. Go get stuck in and make it yourself.
