Let’s get our pork belly on.

If you’re still dreaming about the pork belly you had for your main course at your work Christmas party in 2018 and have no idea how to recreate something that heavenly at home, we’ve got the suss. Not only are these slow-roasted strips tender, flavoursome and delicious, they’re also prepared in the one dish along with your spuds. The veggies take minutes to make and is thrown into the mix at the end, so the whole thing is extremely handy. It also ticks the ~meat and two veg~ box, meaning you can serve it when your granny comes to visit.

These strips are also super cheap (usually about €3-4) and just so tender, a bit like ribs but without the hassle of the bones. Such a handy yet comforting and delicious midweek meal. Convinced? Let’s get down to it.

Step 6

Slice up the peppers and onions and cook them with a little garlic on a slow heat. They’ll take about 15-20 minutes. You don’t want them taking on any colour but rather to cook slowly and let the sweetness come out of them naturally.

Step 7

When the potatoes are fully cooked and the pork tender, whip them out of the oven. The juices from the pork will have leaked down into the potatoes, giving them an insane flavour.
