Unbelievably Simple Home-Cooked Mexican Brunch With Chorizo And Avocado

Ingredients
  • Chorizo
  • Avocado
  • Coriander
  • Potato
  • Eggs
  • Garlic
  • Lime
  • Chilli

Most of us love to head out for brunch at the weekend which is always a good shout.

But with this simple recipe you can make something just as tasty at home, and for half the price.

What I love about this dish is that it only takes about fifteen minutes from start to finish and the flavours are so big, tasty and unique.

The techniques are also super simple so you’ll be able to wow all your mates with little effort.

Instructions

Step 1

Spend a little extra getting some good quality chorizo, avocado and eggs. Spending more will make all the difference in this simple dish.

Step 2

Dice the potatoes into small, even pieces and start frying them in some olive oil over a gentle heat.

Step 3

After about four or five minutes of cooking the potatoes they’ll start to brown up. Add in the chopped chorizo, garlic and green chili. You’ll want to cook them for another four or five minutes – very gently, making sure not to burn the garlic.

Step 4

Peel and slice up the avocado. Squeeze the juice of a lime and a little salt over the flesh to keep it fresh and tasty.

Step 5

Chop up the coriander.

Step 6

Season the potatoes with salt and pepper, and toss them around. Move them to one side of the pan.

Step 7

Crack a couple of eggs into the frying pan.

Step 8

Serve it all up and enjoy the quickest and most delicious Mexican style brunch you could ever imagine.

You can nearly taste how good this is by gazing at these pics. It has a good kick to it and the eggs provide the natural sauce that brings the whole dish together.
