Ingredients
- 1 tin organic cannellini beans
- 1 tin plum tomatoes
- 1 garlic clove crushed
- 1 large onion chopped
- 1 tsp cashew butter
- 1 tbsp. tomato puree
- 4 slices bread
- A touch of oil for sautéing the onion and garlic
This is such a lovely warm and cosy dish – I love it for breakfast, lunch, brunch or dinner, because it’s easy, it’s quick and it’s super-healthy.
Cannellini beans provide more protein than most other plant-derived foods, and they’re also a good source of carbohydrate; provide B-complex vitamins, iron, potassium, zinc, and other essential minerals. They’re also high in soluble fibre, low in calories and fat AND are a Low GI food.
Wow… way to go, cannellini beans! Who knew?!
Instructions
Step 1
Get your ingredients all ready to go, and grab your weapon of choice. I personally like a saucepan for this but whatevs!
Step 2
Add the oil, onion and garlic, and sauté until lightly browned.
Step 3
Once sautéed (oooh, look at you, you fancy little French chef!) add the tin of plum tomatoes and tomato puree, let simmer for about three minutes. While you’re waiting you can pop your bread into the toaster.
Step 4
Nearly there! Now add the cashew butter (this is like adding cream – it makes it super luxurious – but is better for you!) and season to taste with salt and pepper before serve on toast. There you have it, homemade baked beans on toast. DELISH.
