Bacardi Legacy is one of the biggest cocktail competitions in the world and the shortlist for the Irish representative is down to three, one of them being Will Lynch, head bartender at The Exchequer.
Will’s entry is a cocktail called the Rumbera, which was inspired by a Bacardi poster of a Rumba dancer in a red flamenco dress from Cuba in the 1940s. He has toured Ireland with the cocktail, and in addition to selling the drink in The Exchequer, it is also selling in Nova in Galway and Pigalle in Cork.
Will has introduced a fundraising element to his cocktail; every Rumbera sold in The Exchequer across their two venues, €1 will go to The Irish Cancer Society, a charity close to his heart.
So, if you’re heading out this weekend, pop into The Exchequer in Ranelagh or the city centre and do a good deed by ordering the Rumbera!
